Dan Barber is probably best known as the owner and chef at the organic restaurant Blue Hill at Stone Barns in NY. Having personally been to the barn to dine there I must say I was very impressed with the farm and the dishes, delicious and organic! Recently Dan was listed as one of the TIME 100 people of the year 2009 in its scientists & thinkers category. Not only is he passionate about his farm and restaurant he is also a strong believer in the ethics of sustainable farming and a scholar in pursuing the reasons behind the food we eat. His most recent talk on TED sums it all when he discusses "How he Fell in Love with a Fish". Truly an inspiring talk, Dan speaks with great humor and exposes us to the dilemma of farm raised fish and a revolutionary farming method he discovered in Spain.
