Happy Valentine's Day!

As an Asian I should probably be posting a Chinese New Year recipe of some sort, but, unfortunately I did not make anything "Asian" in the kitchen this weekend for Chinese New Year, but instead, made some yummy treats for Valentine's Day! First off whole wheat pancakes for my family, and little jam-filled cakes for dessert in the evening.



Whole Wheat Pancakes

Ingredients:
2 cups whole wheat flour
1 tbs baking powder
1/2 tsp salt
1 tbs brown sugar
3 eggs separated
2 cups soymilk
1 tbs butter

Procedure:
1. Sift together the flour, baking soda and salt in a mixing bowl
2. In a larger bowl beat together the sugar, salt, eggs, soymilk and butter. Slowly mix in the dry ingredients
3. Beat the egg whites and slowly mix into the mixture
4. Using a 1/4 cup measure drop the batter onto a hot frying pan, cook until golden brown
**Sometimes I like to add chocolate chips to mine or blueberries!**





Little Jam Filled Cakes

Ingredients:
2 1/4 cups self-raising flour
3/4 cup caster sugar
1 cup milk
2 eggs
1/2 tsp vanilla extract
75g unsalted butter
1/4 cup strawberry jam (I used raspberry)
12 small strawberries
icing sugar for dusting

Procedure:
1. Preheat the oven to 400F
2. Mix the flour, and sugar in a bowl
3. Put the milk, eggs, vanilla, and butter in a bowl whisking to combine than slowly pour this into the flour and sugar mixture
4. Divide 3/4 of the cake batter between the muffin holes
5. Top each with 1 tsp of the jam and cover with the remaining cake batter, than gently press a strawberry into the center
6. Place the muffin tin in the oven and bake for 20 minutes, cool for 5 minutes and than dust with icing sugar before serving
